  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Step 1
    Scrub 2 lbs potatoes and cut into uniform 3/4-1 inch pieces. Soak in cold water for 30-60 minutes, then drain. Pat potatoes absolutely dry with paper towels for crispiness. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Step 2
    Arrange 6 slices beef bacon in a single layer on a separate baking sheet. Roast in the preheated oven for 15-25 minutes until beautifully crispy. Drain bacon on paper towels, reserving 2-3 tbsp of rendered fat. Crumble bacon into small, bite-sized pieces and set aside.
  3. Step 3
    In a large bowl, combine the dried potatoes with 3 tbsp olive oil, 2-3 tbsp reserved beef bacon fat, 1 tsp garlic powder, ½ tsp smoked paprika, salt, and black pepper. Toss well. Drizzle with 2 tbsp honey and toss again to coat each piece.
  4. Step 4
    Spread the honey-glazed potatoes in a single layer on the prepared baking sheet, ensuring no overcrowding. Roast for 20 minutes at 400°F (200°C) without stirring. After 20 minutes, flip and toss potatoes. Continue roasting for another 20-30 minutes, or until fork-tender and deeply golden brown and wonderfully crispy. Toss one or two more times.
  5. Step 5
    Once potatoes are crispy and tender, remove from oven. Immediately add the reserved crumbled crispy beef bacon over the hot potatoes and toss gently. Taste and adjust seasoning as needed. Garnish generously with fresh, finely chopped parsley and serve immediately.
