  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup whole almonds
  • 1 cup dark chocolate chips (dairy-free if desired)
  • 1 tablespoon coconut oil (for chocolate coating)

Instructions

  1. In a large mixing bowl, combine the unsweetened shredded coconut and almond flour.
  2. Pour in the honey (or maple syrup) and melted coconut oil.
  3. Add the vanilla extract and salt to the bowl.
  4. Mix everything together using a spatula or your hands until well combined and sticky. If too dry, add more coconut oil or honey.
  5. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  6. After chilling, remove the mixture from the refrigerator. Roll about a tablespoon of the mixture into a ball and flatten it slightly.
  7. Place a whole almond in the center of each disc and fold the coconut mixture around it, rolling it back into a ball.
  8. Repeat until all the mixture is shaped into bites (about 12-15 bites).
  9. Place the bites on a parchment-lined baking sheet and refrigerate for another 15-20 minutes.
  10. In a microwave-safe bowl, combine the dark chocolate chips and 1 tablespoon of coconut oil.
  11. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  12. Dip each coconut bite into the melted chocolate using a fork or toothpick, ensuring it’s fully coated. Let excess chocolate drip off.
  13. Place the coated bites back on the parchment-lined baking sheet and refrigerate for about 30 minutes to set.
  14. Transfer the bites to an airtight container. Store in the refrigerator for up to a week or in the freezer for longer storage, separating layers with parchment paper.
  15. When ready to enjoy, let the bites sit at room temperature for a few minutes before indulging.
