Ingredients
Scale
- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup whole almonds
- 1 cup dark chocolate chips (dairy-free if desired)
- 1 tablespoon coconut oil (for chocolate coating)
Instructions
- In a large mixing bowl, combine the unsweetened shredded coconut and almond flour.
- Pour in the honey (or maple syrup) and melted coconut oil.
- Add the vanilla extract and salt to the bowl.
- Mix everything together using a spatula or your hands until well combined and sticky. If too dry, add more coconut oil or honey.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- After chilling, remove the mixture from the refrigerator. Roll about a tablespoon of the mixture into a ball and flatten it slightly.
- Place a whole almond in the center of each disc and fold the coconut mixture around it, rolling it back into a ball.
- Repeat until all the mixture is shaped into bites (about 12-15 bites).
- Place the bites on a parchment-lined baking sheet and refrigerate for another 15-20 minutes.
- In a microwave-safe bowl, combine the dark chocolate chips and 1 tablespoon of coconut oil.
- Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- Dip each coconut bite into the melted chocolate using a fork or toothpick, ensuring it’s fully coated. Let excess chocolate drip off.
- Place the coated bites back on the parchment-lined baking sheet and refrigerate for about 30 minutes to set.
- Transfer the bites to an airtight container. Store in the refrigerator for up to a week or in the freezer for longer storage, separating layers with parchment paper.
- When ready to enjoy, let the bites sit at room temperature for a few minutes before indulging.
Notes
- For a sweet and salty flavor, sprinkle a pinch of sea salt on top of the chocolate before it sets.
- Experiment with different nuts like cashews or pecans for a unique twist.
- Use dark chocolate with a higher cocoa percentage for a more intense chocolate flavor.
- Add a few drops of almond extract to the coconut mixture for an extra almond flavor.
