Ingredients
- Beef Chuck Roast
- Dried Chiles (guajillo and ancho chiles or California chiles)
- Cumin
- Oregano
- Black Pepper
- Garlic
- Yellow Onion
- Beef Broth
- Corn Tortillas
- Fresh Cilantro
- Onions
- Radishes (optional for garnish)
Instructions
- Start by soaking your dried chiles in hot water for about 15-20 minutes until they're soft. Once softened, remove the stems and seeds, then blend the chiles with garlic, onion, cumin, oregano, and a bit of the soaking liquid until you achieve a smooth paste.
- In a large bowl, coat the beef chuck roast with the blended chile marinade. Make sure every piece is thoroughly covered. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 4 hours, or overnight for the best flavor.
- In a large pot or Dutch oven, add a bit of oil over medium-high heat. Sear the marinated beef on all sides until browned. This should take about 5-7 minutes. Once browned, add beef broth and bring it to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 3 hours, or until the meat is tender and easily shreds with a fork. Check occasionally to ensure there’s enough liquid, adding more broth or water if necessary.
- Once the meat is cooked, remove it from the pot and let it cool slightly. Use two forks to shred the beef, and set aside.
- Strain the cooking liquid to remove any solids, and reserve the broth. This flavorful liquid, known as consommé, will be served alongside the tacos.
- Heat a skillet over medium heat and warm the corn tortillas. Place some shredded beef on one half of the tortilla, then fold it over. Cook until the tortilla is slightly crispy and golden brown, about 2 minutes per side.
- Serve the tacos hot, garnished with chopped onions, cilantro, and a side of the reserved consommé for dipping. Enjoy your Authentic Mexican Birria Tacos!

Keywords: For extra flavor, consider adding a splash of apple cider vinegar or lime juice to the marinade. If you enjoy heat, add a few arbol chiles to the marinade for an extra spicy kick. Try adding avocado slices or crumbled queso fresco for an extra layer of flavor.
