  • 1/2 cup cooked bacon, chopped

  • 1 teaspoon smoked paprika
  • 1 package egg roll wrappers (about 20 wrappers)
  • 1 egg, beaten (for sealing the egg rolls)
  • Oil for frying (vegetable or canola oil works well)

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and chopped bacon. Mix until well combined and creamy.
  2. Add the diced jalapeños to the mixture, adjusting the heat level by removing seeds if desired.
  3. Sprinkle in the garlic powder, onion powder, and smoked paprika. Mix until evenly distributed. Taste and adjust seasoning if necessary.
  4. Set the filling aside, covering it with plastic wrap to keep it fresh.
  5. Lay out an egg roll wrapper on a clean surface with one corner pointing towards you (diamond shape).
  6. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
  7. Fold the bottom corner over the filling, tucking it in gently. Fold in the two side corners towards the center.
  8. Roll the egg roll away from you, keeping it tight. Brush a little beaten egg along the top corner to seal it.
  9. Press the top corner down to seal completely. Repeat with remaining wrappers and filling, keeping assembled egg rolls covered with a damp cloth.
  10. In a large skillet or pot, pour enough oil to submerge the egg rolls (about 2-3 inches deep) and heat over medium-high until it reaches 350°F (175°C).
  11. Carefully place a few egg rolls into the hot oil, frying for about 3-4 minutes on each side until golden brown and crispy.
  12. Remove cooked egg rolls and place them on a plate lined with paper towels to drain excess oil. Repeat with remaining egg rolls, adjusting heat as necessary.
