- 1 cup balsamic vinegar
- 1/2 cup honey
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- In a medium-sized bowl, combine the balsamic vinegar, honey, olive oil, minced garlic, dried thyme, and dried rosemary. Whisk until well blended.
- Season the mixture with salt and pepper to taste (start with about 1/2 teaspoon of salt and a pinch of pepper).
- Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap.
- Refrigerate for at least 30 minutes, or up to 4 hours for enhanced flavor.
- Preheat your grill or stovetop grill pan over medium-high heat, or preheat your oven to 400°F (200°C).
- Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
- If grilling, lightly oil the grill grates. Place the chicken on the grill and cook for about 6-7 minutes on one side.
- Flip the chicken and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a lined baking sheet and bake for 20-25 minutes.
- Brush the chicken with reserved marinade during the last few minutes of cooking for added flavor.
- Once cooked, remove the chicken from the grill or oven and let it rest for about 5 minutes.
- Prepare any sides you’d like to serve with it, such as roasted vegetables or a fresh salad.
- Slice the chicken into strips or serve whole, drizzling any remaining glaze over the top.
- Garnish with fresh basil leaves if desired.
