- 2–3 pounds Beef Chuck Roast
- Salt
- Black Pepper
- Garlic Powder
- Onion Powder
- Smoked Paprika
- 1 tablespoon Oil (for searing)
- ½ to 1 cup Beef Broth
- 1 to 1 ½ cups Your Favorite BBQ Sauce
- Refrigerated Flaky Biscuits (1 can, typically yields 8 cups)
- Shredded Cheddar Cheese
- Optional Toppings: Fresh chopped chives, green onions, sour cream, pickled red onions
Instructions
- Pat the chuck roast dry with paper towels and season generously with salt, black pepper, garlic powder, onion powder, and smoked paprika.
- In a large Dutch oven or pot, add oil and sear the beef on all sides until browned.
- For the slow cooker method, place the seared beef in the slow cooker, add beef broth and chopped onion, and cook on low for 6-8 hours or high for 3-4 hours until fork-tender.
- For the Instant Pot method, place the seared beef in the Instant Pot, add beef broth, and cook on high pressure for 60-75 minutes, then allow natural pressure release for 10-15 minutes.
- Remove the beef from the cooking liquid and shred it into bite-sized pieces using two forks.
- Return the shredded beef to the pot or a large bowl, add BBQ sauce, and stir to coat. Keep warm.
- Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin.
- Flatten each biscuit into a larger circle on a floured surface and press into the muffin tin to form cups.
- Spoon the pulled beef mixture into each biscuit cup, filling about 2-3 tablespoons per cup.
- Sprinkle shredded cheddar cheese over the beef in each cup.
- Bake for 15-20 minutes until the biscuit cups are golden brown and the cheese is melted.
- Let cool in the muffin tin for 5 minutes before removing and serving.
