Beef Cheese Burritos: A Delicious Recipe for a Quick Meal

Description

These beef burritos are filled with seasoned ground beef, rice, black beans, corn, and melted cheese, all wrapped in warm flour tortillas. Ideal for a quick dinner or a hearty meal anytime!

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 cup salsa
  • 1/2 cup sour cream (optional, for serving)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  2. Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.
  3. Next, add the ground beef to the skillet. Use a wooden spoon to break it apart as it cooks. Cook until the beef is browned and no longer pink, about 5-7 minutes.
  4. Once the beef is cooked, drain any excess fat from the skillet.
  5. Season the beef mixture with chili powder, cumin, paprika, salt, and pepper. Stir well to combine all the spices evenly throughout the meat.
  6. Cook the seasoned beef for an additional 2-3 minutes, allowing the flavors to meld together.
  7. Once the beef is well-seasoned, reduce the heat to low. Add the cooked rice, black beans, and corn to the skillet. Stir everything together until well combined.
  8. Sprinkle the shredded cheese over the mixture and stir until the cheese is melted and everything is heated through, about 2-3 minutes.
  9. Remove the skillet from heat and set aside to cool slightly while we prepare the tortillas.
  10. In a separate skillet or on a griddle, warm the flour tortillas over medium heat for about 30 seconds on each side.
  11. Once warmed, remove the tortillas from the heat and lay them flat on a clean surface or plate.
  12. Take a generous scoop of the beef and cheese filling and place it in the center of each tortilla.
  13. Fold the sides of the tortilla inwards over the filling, then starting from the bottom, roll the tortilla tightly upwards to enclose the filling completely.
  14. Repeat this process for all four tortillas, ensuring each burrito is tightly rolled.
  15. In the same skillet used for the tortillas, add a little more olive oil if needed and heat over medium heat.
  16. Once the skillet is hot, place the burritos seam-side down in the skillet. Cook for about 2-3 minutes until the bottom is golden brown and crispy.
  17. Carefully flip the burritos over and cook for an additional 2-3 minutes on the other side until golden brown and crispy as well.
  18. Once cooked, remove the burritos from the skillet and place them on a cutting board or plate. Let them rest for a minute before slicing in half.
  19. To serve, place the burritos on a plate and drizzle with salsa. You can also serve additional salsa on the side for dipping. Optionally, add sour cream and garnish with fresh cilantro.

Notes

  • Feel free to customize the filling with your favorite ingredients, such as bell peppers or jalapeños.
  • These burritos can be made ahead of time and frozen for a quick meal later.
