Description
These beef burritos are filled with seasoned ground beef, rice, black beans, corn, and melted cheese, all wrapped in warm flour tortillas. Ideal for a quick dinner or a hearty meal anytime!

- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked rice (white or brown)
- 1 cup black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 cup salsa
- 1/2 cup sour cream (optional, for serving)
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
- Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.
- Next, add the ground beef to the skillet. Use a wooden spoon to break it apart as it cooks. Cook until the beef is browned and no longer pink, about 5-7 minutes.
- Once the beef is cooked, drain any excess fat from the skillet.
- Season the beef mixture with chili powder, cumin, paprika, salt, and pepper. Stir well to combine all the spices evenly throughout the meat.
- Cook the seasoned beef for an additional 2-3 minutes, allowing the flavors to meld together.
- Once the beef is well-seasoned, reduce the heat to low. Add the cooked rice, black beans, and corn to the skillet. Stir everything together until well combined.
- Sprinkle the shredded cheese over the mixture and stir until the cheese is melted and everything is heated through, about 2-3 minutes.
- Remove the skillet from heat and set aside to cool slightly while we prepare the tortillas.
- In a separate skillet or on a griddle, warm the flour tortillas over medium heat for about 30 seconds on each side.
- Once warmed, remove the tortillas from the heat and lay them flat on a clean surface or plate.
- Take a generous scoop of the beef and cheese filling and place it in the center of each tortilla.
- Fold the sides of the tortilla inwards over the filling, then starting from the bottom, roll the tortilla tightly upwards to enclose the filling completely.
- Repeat this process for all four tortillas, ensuring each burrito is tightly rolled.
- In the same skillet used for the tortillas, add a little more olive oil if needed and heat over medium heat.
- Once the skillet is hot, place the burritos seam-side down in the skillet. Cook for about 2-3 minutes until the bottom is golden brown and crispy.
- Carefully flip the burritos over and cook for an additional 2-3 minutes on the other side until golden brown and crispy as well.
- Once cooked, remove the burritos from the skillet and place them on a cutting board or plate. Let them rest for a minute before slicing in half.
- To serve, place the burritos on a plate and drizzle with salsa. You can also serve additional salsa on the side for dipping. Optionally, add sour cream and garnish with fresh cilantro.
Notes
- Feel free to customize the filling with your favorite ingredients, such as bell peppers or jalapeños.
- These burritos can be made ahead of time and frozen for a quick meal later.
