Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  2. In a large, microwave-safe bowl, melt the unsalted butter until mostly liquid. Add the unsweetened cocoa powder and stir until smooth. Let cool slightly.
  3. In a separate bowl, whisk together the granulated sugar and brown sugar. Add the eggs one at a time, whisking until light in color and thickened. Stir in the molasses and non-alcoholic gin flavoring extract.
  4. Pour the cooled butter and cocoa mixture into the egg and sugar mixture. Stir gently until combined. In another bowl, whisk together the all-purpose flour, ground ginger, cinnamon, cloves, nutmeg, and salt. Gradually add to the wet ingredients, mixing until no streaks of flour remain.
  5. Pour the brownie batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out with moist crumbs. Let cool completely in the pan on a wire rack.
  6. In a large mixing bowl, cream together the softened unsalted butter and cream cheese (if using) until light and fluffy. Gradually add the powdered sugar, mixing until smooth. Beat in the non-alcoholic gin flavoring extract and milk or cream until desired consistency is reached. Stir in a pinch of ginger and cinnamon.
