  • 1 1/2 cups Dried Cranberries, chopped

  • 8 oz Full-Fat Cream Cheese, softened
  • 2 cups Powdered Sugar (Confectioners' Sugar), sifted
  • 1 tablespoon Orange Zest
  • 1/2 cup Dried Cranberries, for topping
  • 1/2 cup White Chocolate Chips, for drizzle

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides. Lightly grease the parchment paper.
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl as needed.
  3. Beat in the large egg until fully incorporated. Stir in the vanilla extract until the batter is smooth.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt until there are no lumps.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. A few streaks of flour are okay.
  6. Gently fold in about 1 cup of the chopped dried cranberries and 1 cup of the white chocolate chips using a spatula.
  7. Spread the batter evenly into the prepared baking pan. Bake for 20-25 minutes, or until the edges are lightly golden and a skewer inserted into the center comes out with moist crumbs.
  8. Remove the pan from the oven and let the bar base cool completely in the pan on a wire rack for 1-2 hours.
  9. In a medium mixing bowl, beat the softened full-fat cream cheese and softened unsalted butter until smooth and creamy, about 2 minutes.
  10. Gradually add the powdered sugar to the cream cheese mixture, beating until smooth and fluffy. Stir in the vanilla extract and orange zest.
  11. Once the bar base is completely cool, lift it out of the pan using the parchment paper overhang and place it on a cutting board. Spread the cream cheese frosting evenly over the top.
  12. Scatter the remaining chopped dried cranberries over the frosted bars. Melt the remaining 1/2 cup white chocolate chips and drizzle over the bars.
  13. Place the frosted bars in the refrigerator for at least 30-60 minutes to set. Once chilled, lift the slab out of the pan and cut into 2-inch squares.
