  • 1 cup Biscoff cookie crumbs
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for melting chocolate)
  • Extra Biscoff cookie crumbs for rolling
  • Pinch of sea salt (optional)

Instructions

  1. In a large mixing bowl, combine Biscoff cookie crumbs and softened cream cheese. Mix until well combined.
  2. Add powdered sugar and vanilla extract, mixing until a thick, dough-like consistency forms. Adjust with more cream cheese or cookie crumbs as needed.
  3. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  4. After chilling, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet.
  5. Repeat until all mixture is rolled into truffles. Refrigerate for another 15-20 minutes.
  6. In a microwave-safe bowl, melt chocolate chips (and coconut oil if using) in 30-second intervals, stirring until smooth.
  7. Dip each chilled truffle into the melted chocolate, letting excess drip off, and place back on the baking sheet. Sprinkle with extra cookie crumbs if desired.
  8. Refrigerate for 30 minutes to set the chocolate.
  9. Serve and enjoy, or store in an airtight container in the refrigerator for up to a week.
