- 1 cup Biscoff cookie crumbs
- 1/2 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for melting chocolate)
- Extra Biscoff cookie crumbs for rolling
- Pinch of sea salt (optional)
Instructions
- In a large mixing bowl, combine Biscoff cookie crumbs and softened cream cheese. Mix until well combined.
- Add powdered sugar and vanilla extract, mixing until a thick, dough-like consistency forms. Adjust with more cream cheese or cookie crumbs as needed.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes.
- After chilling, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet.
- Repeat until all mixture is rolled into truffles. Refrigerate for another 15-20 minutes.
- In a microwave-safe bowl, melt chocolate chips (and coconut oil if using) in 30-second intervals, stirring until smooth.
- Dip each chilled truffle into the melted chocolate, letting excess drip off, and place back on the baking sheet. Sprinkle with extra cookie crumbs if desired.
- Refrigerate for 30 minutes to set the chocolate.
- Serve and enjoy, or store in an airtight container in the refrigerator for up to a week.
