Enjoy a flavorful Buffalo Chicken Bowl featuring tender shredded chicken, fluffy rice, and fresh toppings. This dish is perfect for any occasion, offering a spicy kick and satisfying textures that can be easily reheated.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 cup buffalo sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing or blue cheese dressing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper. Toss until well coated.
  3. Pour half of the buffalo sauce over the chicken, ensuring each piece is coated.
  4. Line a baking sheet with parchment paper or aluminum foil. Place the chicken breasts on the sheet, spaced evenly.
  5. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Remove from the oven and let rest for 5 minutes. Shred the chicken using two forks or chop into bite-sized pieces, then toss with the remaining buffalo sauce.
  7. Cook rice according to package instructions (for white or brown rice) or sauté cauliflower rice in olive oil for 5-7 minutes until tender.
  8. Fluff the cooked rice with a fork and set aside.
  9. In each bowl, place a generous scoop of rice as the base.
  10. Top with shredded buffalo chicken, adding extra buffalo sauce if desired.
  11. Sprinkle chopped celery over the chicken.
  12. Add halved cherry tomatoes for freshness.
  13. Arrange sliced avocado on top.
  14. Drizzle with ranch or blue cheese dressing.
  15. Garnish with freshly chopped parsley.

Notes

  • Customize your bowl with additional toppings like sliced jalapeños or green onions for extra flavor.
  • For meal prep, store components separately in airtight containers to maintain freshness.
