- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 cup shredded mozzarella cheese
- 4 hoagie rolls or sub rolls

Instructions
- Start by prepping the chicken breasts. Pound them slightly between two pieces of plastic wrap until they are about 1/2 inch thick.
- In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.
- Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or longer for enhanced flavor.
- Preheat your grill or stovetop grill pan over medium-high heat.
- Once hot, add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for a few minutes before slicing into thin strips.
- In the same skillet or grill pan, add more olive oil if needed and sauté the sliced onions and bell peppers over medium heat for about 5-7 minutes until soft and slightly caramelized.
- Add the sliced chicken back into the pan, pour the buffalo sauce over, and stir to combine. Cook for an additional 2-3 minutes to heat through.
- Preheat your oven to 350°F (175°C).
- Slice the hoagie rolls lengthwise, without cutting all the way through, and place them on a baking sheet.
- Spoon the buffalo chicken and vegetable mixture into each hoagie roll.
- Top with shredded mozzarella cheese.
- Bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly. Broil for an additional 1-2 minutes for extra crispiness, if desired.
- Let the cheesesteaks cool for a minute, then drizzle with blue cheese dressing if desired.
- Garnish with chopped fresh parsley.
