  • 1/2 cup buffalo sauce (adjust to taste)
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 4 hoagie rolls or sub rolls
  • Optional: blue cheese dressing for serving
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Start by prepping the chicken breasts. Pound them slightly between two pieces of plastic wrap until they are about 1/2 inch thick.
  2. In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.
  3. Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or longer for enhanced flavor.
  4. Preheat your grill or stovetop grill pan over medium-high heat.
  5. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  6. Remove the chicken from the grill and let it rest for a few minutes before slicing into thin strips.
  7. In the same skillet or grill pan, add more olive oil if needed and sauté the sliced onions and bell peppers over medium heat for about 5-7 minutes until soft and slightly caramelized.
  8. Add the sliced chicken back into the pan, pour the buffalo sauce over, and stir to combine. Cook for an additional 2-3 minutes to heat through.
  9. Preheat your oven to 350°F (175°C).
  10. Slice the hoagie rolls lengthwise, without cutting all the way through, and place them on a baking sheet.
  11. Spoon the buffalo chicken and vegetable mixture into each hoagie roll.
  12. Top with shredded mozzarella cheese.
  13. Bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly. Broil for an additional 1-2 minutes for extra crispiness, if desired.
