  • ½ teaspoon baking soda

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • ½ cup cream soda
  • 2 tablespoons butterscotch sauce (plus extra for drizzling)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for the frosting)
  • Optional: butterscotch chips for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.
  5. Alternate adding the dry ingredients and the wet ingredients: start with half of the flour mixture, mix on low speed until just combined, then add the buttermilk and cream soda, mixing until just combined. Finally, add the remaining flour mixture and butterscotch sauce, mixing until just combined.
  6. Fill each cupcake liner about 2/3 full with the batter.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
  9. In a large mixing bowl, pour in the heavy whipping cream. Beat on medium-high speed until it starts to thicken.
  10. Add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form (about 3-5 minutes).
  11. Once the cupcakes are completely cool, pipe a generous swirl of whipped cream frosting on top of each cupcake.
  12. Drizzle with extra butterscotch sauce and garnish with butterscotch chips if desired.

  • Ensure the cupcakes are completely cool before frosting to prevent melting.
  • Feel free to adjust the sweetness of the frosting by adding more or less powdered sugar according to your taste.
