Ingredients

Scale
  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), chopped
  • 2 stalks celery, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • 1 cup cooked and crumbled bacon (optional)
  • 1/4 cup chopped green onions for garnish
  • 1/4 cup shredded cheddar cheese for garnish (optional)

Instructions

  1. Gather all your ingredients for a smoother cooking process.
  2. In a large pot or Dutch oven, heat olive oil or butter over medium heat. Add chopped onion, bell pepper, and celery. Sauté for 5-7 minutes until softened and onion is translucent.
  3. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Add diced potatoes to the pot and stir to combine with the sautéed vegetables.
  5. Pour in the chicken or vegetable broth, ensuring potatoes are submerged. Bring to a boil over high heat.
  6. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are tender.
  7. Use a potato masher or immersion blender to mash some potatoes in the pot for thickness, leaving some chunks for texture.
  8. Stir in heavy cream, Cajun seasoning, smoked paprika, and cayenne pepper. Adjust seasoning with salt and pepper.
  9. Simmer for an additional 5-10 minutes, adding more broth or water if needed for desired consistency.
  10. If using bacon, stir in crumbled bacon for added flavor. Reserve some for garnish if desired.
  11. Remove from heat and ladle soup into bowls. Garnish with chopped green onions and shredded cheddar cheese.
  12. Serve the soup on its own or with crusty bread or a side salad. Offer hot sauce on the side for extra heat.
  13. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding broth or cream if it thickens.

Notes

  • Customize the soup by adding other vegetables like corn or diced tomatoes.
  • For a vegetarian version, omit bacon and use vegetable broth.
  • For a creamier texture, blend a portion of the soup and mix it back in.
