Instructions
- Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.
- Peel and dice the potatoes into small cubes. Boil them in salted water for about 10-15 minutes until fork-tender. Drain and set aside.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add diced onion and minced garlic, cooking until they are soft and fragrant, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart as it cooks. Stir in your Cajun seasoning and cook until the meat is browned, about 5-7 minutes.
- In a large bowl, mix the cooked potatoes with the beef mixture. Add half of the shredded cheese and stir until everything is well combined. Taste and adjust seasoning if necessary.
- Generously fill each bell pepper with the potato and beef mixture, packing it in tightly. Top each pepper with the remaining cheese.
- Pour a small amount of water into the bottom of the baking dish to help steam the peppers. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and the peppers are tender.
