  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced pickles
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 12 egg roll wrappers
  • Oil for frying (vegetable or canola)

Instructions

  1. In a large skillet, heat a tablespoon of oil over medium heat. Once hot, add the diced onions and sauté for 2-3 minutes until translucent.
  2. Add the ground beef, breaking it up with a spatula. Cook until browned and fully cooked through, about 5-7 minutes, stirring occasionally.
  3. Drain any excess fat from the skillet to avoid greasy eggrolls.
  4. Season the beef mixture with garlic powder, onion powder, salt, and pepper. Stir well to combine.
  5. Add the diced pickles, ketchup, and mustard to the beef mixture, stirring until well combined.
  6. Remove from heat and stir in the shredded cheddar cheese until melted slightly.
  7. Lay an egg roll wrapper on a clean surface with one corner pointing towards you (diamond shape).
  8. Place 2-3 tablespoons of the cheeseburger filling in the center of the wrapper.
  9. Moisten the edges of the wrapper with water to help seal it.
  10. Fold the bottom corner over the filling, fold in the sides, and roll tightly towards the top corner, pressing edges to seal.
  11. Repeat with remaining wrappers and filling until all are assembled.
  12. In a large, deep skillet or pot, pour enough oil to submerge the eggrolls (about 2-3 inches deep) and heat over medium-high until it reaches 350°F (175°C).
  13. Carefully place a few eggrolls in the hot oil, avoiding overcrowding. Fry in batches if necessary.
  14. Fry for 3-4 minutes on each side until golden brown and crispy, using tongs to turn gently.
  15. Remove from oil and place on a plate lined with paper towels to drain excess oil.
  16. Repeat frying process with remaining eggrolls.
  17. Arrange the eggrolls on a serving platter.
  18. Serve with your favorite dipping sauces like ketchup, mustard, or creamy ranch dressing.
