  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy whipping cream
  • 1/4 cup graham cracker crumbs
  • Chocolate shavings or drizzle (optional, for garnish)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Wash the strawberries thoroughly under cold water, gently rubbing them to remove any dirt.
  2. Pat the strawberries dry with a clean kitchen towel or paper towel.
  3. Remove the green tops from the strawberries by twisting them off or using a paring knife.
  4. Hollow out the center of each strawberry using a small spoon or melon baller, being careful not to pierce through the bottom.
  5. In a medium mixing bowl, add the softened cream cheese and beat on medium speed until smooth and creamy (1-2 minutes).
  6. Gradually add the powdered sugar, mixing on low speed until combined. Scrape down the sides of the bowl as needed.
  7. Add the vanilla extract and sour cream, beating until smooth and creamy.
  8. In a separate bowl, whip the heavy cream until stiff peaks form (3-5 minutes). Be careful not to over-whip.
  9. Gently fold the whipped cream into the cream cheese mixture using a spatula, in batches to keep it light and airy.
  10. Fill each hollowed-out strawberry with the cheesecake mixture using a piping bag or small spoon.
  11. Sprinkle graham cracker crumbs on top of each filled strawberry.
  12. Optionally, drizzle melted chocolate over the top or add chocolate shavings.
  13. Garnish with a small mint leaf on top of each strawberry.
  14. Place the filled strawberries on a serving platter. Any leftover cheesecake filling can be served as a dip.
  15. Cover the platter with plastic wrap and refrigerate for at least 30 minutes.
  16. Serve chilled, arranging the strawberries on a beautiful dish and adding any final garnishes.
