Ingredients
Scale
- 1 pound fresh strawberries
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1/4 cup heavy whipping cream
- 1/4 cup graham cracker crumbs
- Chocolate shavings or drizzle (optional, for garnish)
- Fresh mint leaves (optional, for garnish)
Instructions
- Wash the strawberries thoroughly under cold water, gently rubbing them to remove any dirt.
- Pat the strawberries dry with a clean kitchen towel or paper towel.
- Remove the green tops from the strawberries by twisting them off or using a paring knife.
- Hollow out the center of each strawberry using a small spoon or melon baller, being careful not to pierce through the bottom.
- In a medium mixing bowl, add the softened cream cheese and beat on medium speed until smooth and creamy (1-2 minutes).
- Gradually add the powdered sugar, mixing on low speed until combined. Scrape down the sides of the bowl as needed.
- Add the vanilla extract and sour cream, beating until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form (3-5 minutes). Be careful not to over-whip.
- Gently fold the whipped cream into the cream cheese mixture using a spatula, in batches to keep it light and airy.
- Fill each hollowed-out strawberry with the cheesecake mixture using a piping bag or small spoon.
- Sprinkle graham cracker crumbs on top of each filled strawberry.
- Optionally, drizzle melted chocolate over the top or add chocolate shavings.
- Garnish with a small mint leaf on top of each strawberry.
- Place the filled strawberries on a serving platter. Any leftover cheesecake filling can be served as a dip.
- Cover the platter with plastic wrap and refrigerate for at least 30 minutes.
- Serve chilled, arranging the strawberries on a beautiful dish and adding any final garnishes.
Notes
- For added flavor, consider mixing in lemon juice or zest into the cheesecake filling.
- For a chocolate version, melt chocolate and mix it into the cream cheese filling, adjusting sugar as needed.
- Store-bought cheesecake filling can be used for a quicker option.
