  • 2 large chicken breasts, boneless and skinless
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves (optional)
  • 1/2 cup sour cream (for serving)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  3. Slice the chicken breasts into thin strips, about 1 inch wide.
  4. In a medium bowl, combine minced garlic, olive oil, paprika, onion powder, oregano, salt, and pepper to create a marinade.
  5. Add the sliced chicken to the marinade, ensuring each piece is well-coated. Let it sit for 15-20 minutes (or longer in the fridge for enhanced flavor).
  6. Heat a large skillet over medium-high heat and add a splash of olive oil.
  7. Add the marinated chicken strips to the skillet in a single layer, cooking in batches if necessary.
  8. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  9. Remove the chicken from the skillet and set aside. If using spinach, add it to the skillet and sauté for 1-2 minutes until wilted.
  10. Lay out the flour tortillas on a clean surface.
  11. Place a generous amount of cooked chicken in the center of each tortilla (about 1/4 of the chicken per wrap).
  12. Sprinkle a mix of shredded mozzarella and cheddar cheese over the chicken.
  13. If using, add sautéed spinach on top of the cheese.
  14. Fold the sides of the tortilla inwards, then roll it up from the bottom to the top, tucking in the sides as you go.
  15. Repeat for the remaining tortillas.
  16. Wipe down the skillet and return it to medium heat.
  17. Place the wraps seam-side down in the skillet, cooking 2-3 at a time.
  18. Cook for 3-4 minutes on each side until golden brown and crispy.
  19. Remove the wraps from the skillet and let them cool for a minute before slicing in half.
