  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves
  • 1 cup diced tomatoes
  • 1/2 cup ranch dressing (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and pat dry the chicken breasts.
  3. Mix garlic powder, onion powder, paprika, salt, and pepper in a small bowl. Rub the mixture over the chicken breasts.
  4. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 5 minutes, then shred it into bite-sized pieces.
  8. In a medium bowl, mix shredded mozzarella and cheddar cheese.
  9. Add the shredded chicken to the cheese mixture and stir until well combined.
  10. Lay out the tortillas and warm them if desired.
  11. Divide the chicken and cheese mixture among the tortillas.
  12. Top with fresh spinach leaves, diced tomatoes, and ranch dressing if using.
  13. Fold the sides of the tortilla over the filling and roll it up tightly.
  14. Add the remaining 2 tablespoons of olive oil to the skillet and heat over medium heat.
  15. Place the wraps seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown.
  16. Cover the skillet with a lid for a minute if the cheese hasn’t melted.
  17. Remove the wraps from the skillet, let cool for a minute, slice in half, and serve warm with optional ranch dressing and parsley.
