  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves
  • 1 cup diced tomatoes
  • 1/2 cup ranch dressing (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness on a cutting board.
  3. In a small bowl, mix minced garlic, garlic powder, onion powder, paprika, salt, and pepper.
  4. Rub the seasoning mix all over the chicken breasts.
  5. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove the skillet from the oven and sprinkle the shredded mozzarella and cheddar cheese over the chicken. Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  8. Warm the tortillas in a dry skillet over low heat for about 30 seconds on each side.
  9. Let the chicken rest for a few minutes, then slice it into strips.
  10. Assemble the wraps by laying a tortilla flat, adding spinach, chicken strips, diced tomatoes, and ranch dressing if desired.
  11. Fold in the sides of the tortilla and roll it up tightly.
  12. For toasted wraps, heat a clean skillet over medium heat, add olive oil, and place the wraps seam-side down. Cook for 2-3 minutes on each side until golden brown and crispy.
  13. Let the wraps cool for a minute before slicing in half.
  14. Serve the wraps on a platter, garnished with fresh parsley, and enjoy with extra ranch dressing or your favorite dipping sauce.
