These Cheesy Mashed Potato Puffs are a deliciously crispy and creamy treat, perfect for any occasion. Made with a blend of cheeses and seasoned to perfection, they make an excellent appetizer, side dish, or snack that will impress your guests!

Ingredients

Scale
  • 2 pounds of russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (for coating)
  • Cooking spray or additional melted butter (for greasing)

Instructions

  1. Peel the russet potatoes and cut them into evenly sized chunks (1-2 inches).
  2. Place the potato chunks in a large pot, cover with cold water, and add a pinch of salt.
  3. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  4. Drain the potatoes and let them sit in the colander for a few minutes to evaporate excess moisture.
  5. In a large mixing bowl, mash the drained potatoes until smooth and creamy.
  6. Add melted butter, sour cream, and milk to the mashed potatoes, mixing until combined.
  7. Stir in shredded cheddar and grated Parmesan cheese.
  8. Add eggs, garlic powder, onion powder, salt, and pepper, mixing until well combined.
  9. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or cooking spray.
  10. Form the potato mixture into small balls (about the size of a golf ball).
  11. Roll each ball in breadcrumbs to coat evenly.
  12. Place the coated potato puffs on the prepared baking sheet, leaving space between each.
  13. Bake in the preheated oven for 20-25 minutes until golden brown and crispy, turning halfway through.
  14. Keep an eye on them during the last few minutes to avoid burning.
  15. Remove from the oven and let cool for a few minutes on the baking sheet.
  16. Serve warm with your favorite dipping sauce, such as ranch dressing or spicy aioli.
  17. Enjoy these puffs as a side dish, appetizer, or snack!

Notes

  • For an ultra-smooth texture, consider using a potato ricer.
  • Feel free to experiment with different cheeses or add herbs for extra flavor.
  • These puffs can be made ahead of time and frozen before baking for a quick snack later.
