Ingredients
- Sweet Potatoes
- Sharp Cheddar Cheese
- Gruyère Cheese
- Yellow Onions
- Heavy Cream
- Unsalted Butter
- Fresh Thyme
- Salt
- Pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Peel the sweet potatoes and slice them thinly, about 1/8 inch thick.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until they are soft and deeply golden, about 15-20 minutes.
- In a bowl, combine the heavy cream, half of the grated cheese, and your chosen herbs or spices. Season with salt and pepper to taste.
- In a greased baking dish, start layering half of the sweet potato slices. Spread half of the caramelized onions on top, then pour half of the cream mixture over it. Repeat with the remaining sweet potatoes, onions, and cream.
- Finish by sprinkling the remaining cheese over the top layer of sweet potatoes.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 20-25 minutes, or until the top is golden and bubbly, and the sweet potatoes are tender when pierced with a fork.
- Allow the gratin to rest for about 10 minutes before serving.
