Ingredients

Scale
  • 12 ounces cheese tortellini
  • 24 ounces tomato sauce or crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 12 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 23 minced garlic cloves
  • Fresh basil
  • Oregano
  • Red pepper flakes

  • Pepper

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add one chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  2. Add 2-3 minced garlic cloves and sauté for another minute until fragrant.
  3. Pour in 24 ounces of your favorite tomato sauce or crushed tomatoes. Stir to combine.
  4. Add 4 cups of vegetable broth and bring the mixture to a gentle simmer.
  5. Once the soup is simmering, toss in 12 ounces of tortellini. Cook according to the package instructions, usually around 5-7 minutes.
  6. When the tortellini is cooked, stir in 1 cup of heavy cream. Adjust the heat to low and let it heat through, about 2-3 minutes.
  7. Mix in 1-2 cups of shredded mozzarella and a half cup of grated Parmesan cheese. Stir until the cheese is melted and the soup is creamy.
  8. Season with salt, pepper, and a pinch of red pepper flakes to taste. Add freshly chopped basil just before serving.
