Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. Melt the unsalted butter in a microwave-safe bowl or small saucepan and let it cool for a few minutes.
  3. In a large mixing bowl, whisk together the cooled melted butter with both the brown sugar and granulated sugar until well combined. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and maple extract.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and nutmeg.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed or by hand until just combined.
  6. Chill the cookie dough for at least 30 minutes in the refrigerator.
  7. In a small bowl, combine 1/4 cup granulated sugar with 1 teaspoon of ground cinnamon for the cinnamon-sugar coating.
  8. Using a medium cookie scoop, scoop out balls of dough and roll each in the cinnamon-sugar mixture.
  9. Place the coated cookie dough balls about 2 inches apart on the prepared baking sheets and bake for 9-11 minutes until the edges are set and lightly golden.
