  • 4 slices of bacon

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the russet potatoes under cold water, pat dry, and slice into thin strips (about 1/4 inch thick).
  3. Soak the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.
  4. Drain and pat the potatoes dry. Toss them in a large bowl with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  5. Spread the seasoned potato strips in a single layer on a parchment-lined baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. In a skillet over medium heat, cook the bacon slices until crispy (about 5-7 minutes). Transfer to a paper towel-lined plate to drain.
  7. Once cooled, chop the bacon into small pieces and set aside.
  8. Shred or dice your cooked chicken and season with salt and pepper.
  9. Grate the cheddar cheese if using block cheese.
  10. Remove the fries from the oven and sprinkle half of the cheddar cheese over them.
  11. Distribute the shredded chicken and chopped bacon evenly over the fries.
  12. Sprinkle the remaining cheddar cheese on top.
