  • 8 oz egg noodles
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add about a tablespoon of salt.
  2. Add the egg noodles and stir gently to prevent sticking. Cook according to package instructions (7-9 minutes) until al dente. Drain and set aside, tossing with a little olive oil to prevent sticking.
  3. In a large skillet, heat butter and olive oil over medium heat. Once melted and bubbling, add chicken pieces, spreading them evenly in the pan.
  4. Season with salt, pepper, garlic powder, onion powder, and Italian seasoning. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
  5. In the same skillet, pour in chicken broth and scrape up browned bits from the bottom. Bring to a simmer and cook for 2-3 minutes to reduce slightly.
  6. Add heavy cream and stir to combine, allowing to simmer for another 3-4 minutes until thickened. Gradually stir in Parmesan cheese until melted and smooth.
  7. Return the cooked chicken to the skillet and stir to coat in the sauce. Add the drained egg noodles and gently toss until well-coated.
  8. If the sauce is too thick, add a splash of chicken broth or pasta water to loosen it. Taste and adjust seasoning if necessary.
  9. Plate the chicken and noodles in shallow bowls. Garnish with freshly chopped parsley and serve immediately while hot.
