- 8 oz egg noodles
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add about a tablespoon of salt.
- Add the egg noodles and stir gently to prevent sticking. Cook according to package instructions (7-9 minutes) until al dente. Drain and set aside, tossing with a little olive oil to prevent sticking.
- In a large skillet, heat butter and olive oil over medium heat. Once melted and bubbling, add chicken pieces, spreading them evenly in the pan.
- Season with salt, pepper, garlic powder, onion powder, and Italian seasoning. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, pour in chicken broth and scrape up browned bits from the bottom. Bring to a simmer and cook for 2-3 minutes to reduce slightly.
- Add heavy cream and stir to combine, allowing to simmer for another 3-4 minutes until thickened. Gradually stir in Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet and stir to coat in the sauce. Add the drained egg noodles and gently toss until well-coated.
- If the sauce is too thick, add a splash of chicken broth or pasta water to loosen it. Taste and adjust seasoning if necessary.
- Plate the chicken and noodles in shallow bowls. Garnish with freshly chopped parsley and serve immediately while hot.
