Savor the flavors of a Chicken Caesar Flatbread Sandwich, featuring tender chicken, crisp romaine, and creamy Caesar dressing, all wrapped in warm flatbread. This quick and easy recipe is perfect for lunch or a light dinner, offering a delicious combination of textures and tastes.

Ingredients

Scale
  • 2 large flatbreads
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ½ cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • ¼ cup croutons (optional)
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. If you haven’t already cooked your chicken, grill, bake, or poach it. Season with salt, pepper, and olive oil.
  2. Preheat your grill or oven to medium-high heat. Grill for 6-7 minutes on each side or bake at 375°F (190°C) for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  3. Let the chicken rest for 5 minutes before shredding or dicing.
  4. In a large bowl, combine the shredded chicken with Caesar dressing, adjusting the amount to your preference.
  5. Chop the romaine lettuce and rinse it under cold water, then spin dry.
  6. Halve the cherry tomatoes and set aside. Prepare croutons if using.
  7. Lay out the flatbreads on a clean surface.
  8. Spoon the chicken and dressing mixture onto each flatbread, spreading evenly.
  9. Add chopped romaine, halved cherry tomatoes, and sprinkle with Parmesan cheese. Add croutons if desired.
  10. Season with salt and pepper to taste.
  11. For warm flatbreads, heat a skillet over medium heat with a drizzle of olive oil. Cook the assembled flatbreads for 2-3 minutes on each side until golden brown and crispy.
  12. Alternatively, place on a baking sheet and warm in a preheated oven at 350°F (175°C) for 5-7 minutes.
  13. Remove from heat and let cool for a minute. Cut into halves or quarters.
  14. Serve immediately, garnished with extra Parmesan cheese and a drizzle of Caesar dressing if desired. Pair with a side of extra romaine or a light salad.

Notes

  • For added flavor, marinate the chicken in olive oil, lemon juice, garlic, and herbs before cooking.
  • Feel free to customize with additional toppings like avocado or bacon for extra flavor.
