- In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the vanilla extract and mix until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
- Fold in the semi-sweet chocolate chips using a spatula or wooden spoon.
- Add the milk a little at a time, mixing until the dough is soft but not sticky.
- Cover the bowl with plastic wrap or transfer the dough to an airtight container.
- Refrigerate for at least 30 minutes.
- Remove the dough from the refrigerator and let it sit at room temperature for about 5 minutes.
- Using a small cookie scoop or your hands, take about 1 tablespoon of dough and roll it into a ball. Place on a parchment-lined baking sheet.
- Repeat until all dough is rolled into balls (about 20-24 truffles).
- Refrigerate the rolled truffles for another 15-20 minutes.
- Melt the chocolate melting wafers or chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth, or use a double boiler.
- Remove the truffles from the refrigerator.
- Dip each truffle into the melted chocolate, ensuring full coverage, and allow excess chocolate to drip off before placing back on the baking sheet.
- Optionally, sprinkle with sea salt or crushed nuts before the chocolate sets.
- Repeat until all truffles are coated.
- Allow the chocolate-coated truffles to set at room temperature or refrigerate until the chocolate is firm.
