Description

Enjoy these rich and chewy Chocolate Marshmallow Cookies, filled with semi-sweet chocolate chips and fluffy mini marshmallows. Perfect for satisfying your sweet cravings, these cookies are a delightful treat for any occasion!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup chopped nuts (optional)

Instructions

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  2. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  5. Fold in the semi-sweet chocolate chips and mini marshmallows using a spatula. If desired, fold in the chopped nuts.
  6. Cover the mixing bowl with plastic wrap or transfer the dough to an airtight container.
  7. Refrigerate the dough for at least 30 minutes, or up to 2 hours for enhanced flavor.
  8. Preheat your oven to 350°F (175°C).
  9. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
  10. Bake in the preheated oven for 10-12 minutes. The cookies will look slightly underbaked in the center.
  11. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  12. For an extra touch, drizzle melted chocolate over the cooled cookies.
  13. Serve warm with a glass of milk or your favorite beverage. Store leftovers in an airtight container at room temperature for up to a week.
  14. To freeze, place cookies in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag or container. They can be frozen for up to 3 months.

Notes

  • For a richer flavor, consider using dark chocolate chips.
  • Feel free to customize with your favorite mix-ins, such as dried fruit or different types of nuts.
