Instructions
- Melt the Chocolate: Place dark chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until fully melted and smooth (about 1 to 2 minutes). Avoid overheating.
- Prepare the Cupcake Liners: Line a mini muffin tin with mini cupcake liners.
- Coat the Liners: Use a small spoon or pastry brush to coat the inside of each cupcake liner with melted chocolate, ensuring a thick layer.
- Chill the Chocolate: Refrigerate the muffin tin for 10-15 minutes until the chocolate hardens.
- Whip the Cream: In a medium bowl, whip the heavy cream on medium speed until it thickens. Gradually add powdered sugar and continue whipping until soft peaks form (3-5 minutes).
- Add Flavor: Gently fold in vanilla extract and a pinch of salt.
- Prepare the Raspberries: Rinse and dry the fresh raspberries. Halve larger raspberries if necessary.
- Fill the Chocolate Cups: Remove the hardened chocolate cups from the muffin tin and peel away the liners. Place them on a serving platter.
- Add the Raspberry Filling: Spoon whipped cream into each chocolate cup, filling them halfway.
