These Chocolate Raspberry Cups feature a decadent chocolate shell filled with light whipped cream and fresh raspberries, making them a perfect treat for any occasion. Their elegant presentation and delightful flavor are sure to impress your guests!

Ingredients

Scale
  • 1 cup dark chocolate chips (or milk chocolate, if preferred)
  • 1 cup fresh raspberries
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed graham crackers (optional, for added texture)
  • Pinch of salt
  • Mini cupcake liners

Instructions

  1. Melt the Chocolate: Place dark chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until fully melted and smooth (about 1 to 2 minutes). Avoid overheating.
  2. Prepare the Cupcake Liners: Line a mini muffin tin with mini cupcake liners.
  3. Coat the Liners: Use a small spoon or pastry brush to coat the inside of each cupcake liner with melted chocolate, ensuring a thick layer.
  4. Chill the Chocolate: Refrigerate the muffin tin for 10-15 minutes until the chocolate hardens.
  5. Whip the Cream: In a medium bowl, whip the heavy cream on medium speed until it thickens. Gradually add powdered sugar and continue whipping until soft peaks form (3-5 minutes).
  6. Add Flavor: Gently fold in vanilla extract and a pinch of salt.
  7. Prepare the Raspberries: Rinse and dry the fresh raspberries. Halve larger raspberries if necessary.
  8. Fill the Chocolate Cups: Remove the hardened chocolate cups from the muffin tin and peel away the liners. Place them on a serving platter.
  9. Add the Raspberry Filling: Spoon whipped cream into each chocolate cup, filling them halfway.
  10. Top with Raspberries: Place 2-3 fresh raspberries on top of the whipped cream. Optionally, sprinkle crushed graham crackers on top.
  11. Finish with Chocolate Drizzle: Drizzle any leftover melted chocolate over the top of each cup.
  12. Chill Again: Refrigerate the assembled cups for about 30 minutes to set the whipped cream.
  13. Serve and Enjoy: Once chilled, serve your chocolate raspberry cups and enjoy!
