Ingredients
Scale
- 2 medium-sized apples (preferably Granny Smith)
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1/4 cup granulated sugar
- 1/2 cup milk (whole or 2%)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
- Oil for frying (vegetable or canola oil)
- 1 cup powdered sugar (for the glaze)
- 2 tablespoons milk (for the glaze)
- 1 teaspoon ground cinnamon (for the glaze)
Instructions
- Wash the apples thoroughly under running water to remove any wax or dirt.
- Peel the apples using a sharp knife, preferably in a circular motion.
- Core the apples and chop them into small, bite-sized pieces (about 1/2-inch cubes).
- In a small bowl, toss the chopped apples with 1 tablespoon of granulated sugar and 1 teaspoon of ground cinnamon.
- In a large mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of nutmeg (if using). Whisk until well combined.
- In another bowl, whisk together 1/4 cup of granulated sugar, 1/2 cup of milk, 1 large egg, 1 teaspoon of vanilla extract, and 1/4 cup of melted unsalted butter.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. A few lumps are fine.
- Fold in the prepared apple mixture, ensuring even distribution throughout the batter.
- In a deep skillet or heavy-bottomed pot, pour in enough oil to reach a depth of about 2 inches. Heat the oil over medium heat until it reaches 350°F (175°C).
- Using a small cookie scoop or two spoons, carefully drop spoonfuls of the batter into the hot oil, frying about 4-5 fritters at a time.
- Fry the fritters for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to flip them gently.
- Remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
- Continue frying the remaining batter, adjusting the heat as necessary to maintain 350°F.
- In a small bowl, whisk together 1 cup of powdered sugar, 2 tablespoons of milk, and 1 teaspoon of ground cinnamon until smooth.
- Drizzle the glaze over the cooled fritters before serving.
Notes
- For a richer flavor, consider adding a pinch of vanilla extract to the glaze.
- These fritters are best enjoyed fresh but can be stored in an airtight container for a day or two.
