  • 1/2 cup brown sugar, packed
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and granulated sugar. Whisk until well mixed.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined.
  5. In a small bowl, combine the brown sugar and ground cinnamon. Add nuts if using.
  6. Line a muffin tin with paper liners or grease with cooking spray.
  7. Fill each muffin cup about halfway with batter.
  8. Sprinkle a generous tablespoon of the cinnamon-sugar mixture over the batter in each cup.
  9. Top each muffin cup with more batter until they are about three-quarters full.
  10. Optionally, sprinkle a little more cinnamon-sugar mixture on top.
  11. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  12. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  13. For the glaze, mix powdered sugar with 1 tablespoon of milk until smooth. Adjust consistency with more milk if needed.
  14. Drizzle the glaze over the cooled muffins.
