  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil (optional, for melting chocolate)
  • Extra shredded coconut for rolling (optional)

Instructions

  1. In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until well combined and sticky.
  2. Cover the bowl with plastic wrap or a kitchen towel and refrigerate for about 30 minutes.
  3. Remove the mixture from the refrigerator. Scoop out about a tablespoon and roll it into a ball.
  4. Place the balls on a parchment-lined baking sheet, leaving space between each.
  5. Continue until all the mixture is shaped into balls (about 20-25).
  6. Chill the shaped balls in the refrigerator for another 30 minutes.
  7. In a microwave-safe bowl, add the white chocolate chips and coconut oil (if using).
  8. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  9. Let it cool slightly before dipping.
  10. Take the chilled coconut balls out of the refrigerator. Dip each ball into the melted chocolate using a fork or toothpick, allowing excess chocolate to drip off.
  11. Place the coated balls back on the parchment-lined sheet. Sprinkle extra shredded coconut on top if desired.
  12. Repeat for all coconut balls, reheating chocolate if necessary.
  13. Return the coated balls to the refrigerator for about 30 minutes or until the chocolate sets.
  14. Store in an airtight container in the refrigerator for up to a week.
