- 1 cup white chocolate chips

- Extra shredded coconut for rolling (optional)
Instructions
- In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until well combined and sticky.
- Cover the bowl with plastic wrap or a kitchen towel and refrigerate for about 30 minutes.
- Remove the mixture from the refrigerator. Scoop out about a tablespoon and roll it into a ball.
- Place the balls on a parchment-lined baking sheet, leaving space between each.
- Continue until all the mixture is shaped into balls (about 20-25).
- Chill the shaped balls in the refrigerator for another 30 minutes.
- In a microwave-safe bowl, add the white chocolate chips and coconut oil (if using).
- Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Let it cool slightly before dipping.
- Take the chilled coconut balls out of the refrigerator. Dip each ball into the melted chocolate using a fork or toothpick, allowing excess chocolate to drip off.
- Place the coated balls back on the parchment-lined sheet. Sprinkle extra shredded coconut on top if desired.
- Repeat for all coconut balls, reheating chocolate if necessary.
- Return the coated balls to the refrigerator for about 30 minutes or until the chocolate sets.
- Store in an airtight container in the refrigerator for up to a week.
