Brownie Protein Bites (Gluten Free, Paleo)

These Collagen Brownie Bites are rich, fudgy, and made with clean, wholesome ingredients. Gluten-free, paleo, no-bake, and packed with protein, they’re the perfect healthy snack for chocolate lovers! Keep them in the fridge for quick energy on the go, or pack them in a lunchbox for a naturally sweet treat!

Ingredients

  • 1 cup almond flour

  • 1/4 cup unsweetened cocoa powder

  • 1/2 cup protein powder (collagen or plant-based, chocolate or unflavored)

  • 1/4 cup nut butter (almond, cashew, or sunflower seed)

  • 1/4 cup maple syrup or 5 medjool dates (pitted and soaked)

  • 1 tsp vanilla extract

  • 12 tbsp almond milk (only as needed for texture)

  • Pinch of sea salt

  • Optional: 2 tbsp mini chocolate chips, chopped nuts, shredded coconut

Instructions

  • Blend the dry ingredients: In a food processor, combine almond flour, cocoa powder, protein powder, and salt. Pulse a few times to mix.

  • Add the wet ingredients: Add nut butter, maple syrup (or soaked dates), and vanilla extract. Blend until a sticky dough forms.

  • Adjust texture: If the mixture seems dry, add almond milk one tablespoon at a time until it holds together easily.

  • Fold in extras: Stir in chocolate chips or any add-ins of choice, if using.

  • Roll into balls: Use your hands or a cookie scoop to roll the dough into 12 small balls.

  • Chill: Refrigerate for 20–30 minutes to firm up.

 

  • Enjoy & store: Keep stored in the fridge for up to 1 week, or freeze for up to 3 months.

Notes

  • Use soft medjool dates if going that route—soak in warm water for 10 minutes if needed.

  • Swap nut butter for sunflower seed butter for a nut-free option.

  • Want even more richness? Add 1 tbsp espresso powder or a dash of cinnamon.

  • Wet your hands slightly before rolling the bites to prevent sticking.
