Ingredients
-
1 cup almond flour
-
1/4 cup unsweetened cocoa powder
-
1/2 cup protein powder (collagen or plant-based, chocolate or unflavored)
-
1/4 cup nut butter (almond, cashew, or sunflower seed)
-
1/4 cup maple syrup or 5 medjool dates (pitted and soaked)
-
1 tsp vanilla extract
-
1–2 tbsp almond milk (only as needed for texture)
-
Pinch of sea salt
-
Optional: 2 tbsp mini chocolate chips, chopped nuts, shredded coconut
Instructions
-
Blend the dry ingredients: In a food processor, combine almond flour, cocoa powder, protein powder, and salt. Pulse a few times to mix.
-
Add the wet ingredients: Add nut butter, maple syrup (or soaked dates), and vanilla extract. Blend until a sticky dough forms.
-
Adjust texture: If the mixture seems dry, add almond milk one tablespoon at a time until it holds together easily.
-
Fold in extras: Stir in chocolate chips or any add-ins of choice, if using.
-
Roll into balls: Use your hands or a cookie scoop to roll the dough into 12 small balls.
-
Chill: Refrigerate for 20–30 minutes to firm up.
-
Enjoy & store: Keep stored in the fridge for up to 1 week, or freeze for up to 3 months.
Notes
-
Use soft medjool dates if going that route—soak in warm water for 10 minutes if needed.
-
Swap nut butter for sunflower seed butter for a nut-free option.
-
Want even more richness? Add 1 tbsp espresso powder or a dash of cinnamon.
-
Wet your hands slightly before rolling the bites to prevent sticking.
-
Store in an airtight container in the fridge or freezer for easy snacking.
