- In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk until well mixed.
- In a separate bowl, whisk together the buttermilk, eggs, and melted butter until fully combined. Ensure the butter isn’t too hot to avoid cooking the eggs.
- Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula or wooden spoon, being careful not to overmix; a few lumps are okay.
- Fold in the corn kernels and shredded cheddar cheese (if using) for added flavor and texture.
- Plug in your waffle iron and set it to medium-high heat. Lightly grease with cooking spray or melted butter if necessary.
- Allow the waffle iron to heat for about 5 minutes until hot to the touch.
- Pour about 1/4 cup of batter onto the center of the preheated waffle iron.
