Instructions

  1. In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk until well mixed.
  2. In a separate bowl, whisk together the buttermilk, eggs, and melted butter until fully combined. Ensure the butter isn’t too hot to avoid cooking the eggs.
  3. Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula or wooden spoon, being careful not to overmix; a few lumps are okay.
  4. Fold in the corn kernels and shredded cheddar cheese (if using) for added flavor and texture.
  5. Plug in your waffle iron and set it to medium-high heat. Lightly grease with cooking spray or melted butter if necessary.
