Ingredients

For the Honey Butter Syrup:

1/4 cup honey

Pinch of sea salt

Instructions

Preheat your mini waffle maker.

In a medium bowl, whisk together cornmeal, flour, sugar (if using), salt, baking soda, and baking powder.

In another bowl, whisk the egg, buttermilk, and melted butter until combined.

Pour the wet ingredients into the dry and stir until just combined—don’t overmix.

If using add-ins like cheese or jalapeños, fold them in now.

Spoon 1–2 tablespoons of batter into the hot waffle maker and cook until golden and crisp. Repeat with remaining batter.

For the syrup: melt butter and honey in a small saucepan over low heat. Add salt and any optional flavorings. Stir and keep warm.

No buttermilk? Just mix 3/4 cup milk with 1 tsp vinegar or lemon juice and let sit 5 minutes.
