- 1 cup fresh blueberries (or frozen, thawed and drained)
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- Cooking spray or parchment paper for baking
Instructions
- Preheat your oven to 300°F (150°C).
- Carefully separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in a separate bowl.
- Add cottage cheese, almond flour, baking powder, salt, and vanilla extract to the egg yolks. If desired, add honey or maple syrup. Whisk until smooth and creamy.
- Beat the egg whites on medium-high speed until stiff peaks form.
- Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the egg whites.
- Fold in the blueberries gently.
- Line a baking sheet with parchment paper or grease it with cooking spray.
- Drop dollops of the batter onto the prepared baking sheet, leaving space between each.
- Bake for 25-30 minutes, or until golden brown and set.
- Let the cloud bread cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Enjoy fresh, with yogurt, honey, or cinnamon.
- Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze with parchment paper between pieces.
- Warm in a toaster or microwave to restore fluffiness.
- Experiment with lemon zest or chopped nuts for different flavors.
- Take your time and enjoy the cooking process!
