Enjoy the light and fluffy Cottage Cheese Blueberry Cloud Bread, a deliciously creamy and sweet treat perfect for breakfast or a snack. Low in carbs and high in protein, this guilt-free delight features fresh blueberries and is easy to make, offering a satisfying way to curb your cravings.

Ingredients

Scale
  • 1 cup cottage cheese
  • 4 large eggs, separated
  • 1/4 cup almond flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh blueberries (or frozen, thawed and drained)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • Cooking spray or parchment paper for baking

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Carefully separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in a separate bowl.
  3. Add cottage cheese, almond flour, baking powder, salt, and vanilla extract to the egg yolks. If desired, add honey or maple syrup. Whisk until smooth and creamy.
  4. Beat the egg whites on medium-high speed until stiff peaks form.
  5. Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the egg whites.
  6. Fold in the blueberries gently.
  7. Line a baking sheet with parchment paper or grease it with cooking spray.
  8. Drop dollops of the batter onto the prepared baking sheet, leaving space between each.
  9. Bake for 25-30 minutes, or until golden brown and set.
  10. Let the cloud bread cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Enjoy fresh, with yogurt, honey, or cinnamon.
  12. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze with parchment paper between pieces.
  13. Warm in a toaster or microwave to restore fluffiness.
  14. Experiment with lemon zest or chopped nuts for different flavors.
  15. Take your time and enjoy the cooking process!

Notes

  • Ensure no egg yolk is mixed with the egg whites for optimal whipping.
