- 1 cup cotton candy, chopped into small pieces
- 1 cup white chocolate chips
- ½ cup rainbow sprinkles (optional)
Instructions
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
- Fold in the chopped cotton candy and white chocolate chips using a spatula. If using, add rainbow sprinkles at this stage.
- Cover the mixing bowl with plastic wrap or transfer the dough to an airtight container.
- Refrigerate the dough for at least 30 minutes.
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
- Place cooled cookies in an airtight container, layering with parchment paper to prevent sticking.
- Store at room temperature for up to one week or freeze for up to three months.
