These Country Ranch Green Beans are a tasty side dish made with fresh green beans sautéed with onions, garlic, and herbs, finished with apple cider vinegar and optional feta cheese. Quick and easy to prepare, they complement any meal perfectly!

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth (or vegetable broth for a vegetarian option)
  • 1 tablespoon apple cider vinegar
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the green beans under cold water to remove any dirt or debris.
  2. Trim the ends of the green beans by snapping them off or using a knife.
  3. Set the green beans aside.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the diced onion and sauté for about 3-4 minutes until translucent.
  6. Stir in the minced garlic and cook for an additional 1-2 minutes, stirring frequently.
  7. Add the dried thyme, oregano, salt, black pepper, and red pepper flakes (if using). Stir and cook for another minute.
  8. Add the trimmed green beans to the skillet, stirring to coat them in the oil and spices.
  9. Pour in the chicken broth (or vegetable broth) and bring to a gentle simmer.
  10. Cover the skillet with a lid and cook for about 5-7 minutes, checking for tenderness.
  11. If needed, cover and cook for an additional couple of minutes.
  12. Stir in the apple cider vinegar before removing from heat.
  13. Transfer the green beans to a serving dish, including the broth and aromatics.
  14. If using, sprinkle feta cheese over the top.
  15. Garnish with freshly chopped parsley.

Notes

  • For a vegetarian option, use vegetable broth instead of chicken broth.
  • Adjust the cooking time based on your preferred level of tenderness for the green beans.
