- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1 cup frozen peas (optional)
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts.
- Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the skillet and let it rest for 5 minutes. Shred or chop into bite-sized pieces.
- Bring a large pot of salted water to a boil.
- Add the gnocchi and cook according to package instructions (about 2-3 minutes) until they float.
- Use a slotted spoon to transfer the gnocchi to a large bowl, drizzling with olive oil to prevent sticking.
- In the same skillet, reduce heat to low and add softened cream cheese. Stir until it starts to melt.
- Gradually pour in chicken broth while stirring to create a smooth sauce. Adjust thickness with more broth if needed.
- Stir in the ranch seasoning mix and then add shredded cheddar cheese, stirring until melted and creamy. If using, add frozen peas and cook for an additional 2-3 minutes.
- Add shredded chicken to the creamy sauce and stir to coat.
- Gently fold in the cooked gnocchi, ensuring they are well coated.
- Stir in crumbled bacon for added crunch and flavor.
- Taste and adjust seasoning with salt and pepper if necessary.
- Remove from heat and serve in bowls, garnished with sliced green onions.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will meld together, enhancing the taste.
