Ingredients

Scale
  • 1 pound of gnocchi (store-bought or homemade)
  • 1 pound of boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup cream cheese, softened
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 cup frozen peas (optional)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts.
  3. Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the skillet and let it rest for 5 minutes. Shred or chop into bite-sized pieces.
  5. Bring a large pot of salted water to a boil.
  6. Add the gnocchi and cook according to package instructions (about 2-3 minutes) until they float.
  7. Use a slotted spoon to transfer the gnocchi to a large bowl, drizzling with olive oil to prevent sticking.
  8. In the same skillet, reduce heat to low and add softened cream cheese. Stir until it starts to melt.
  9. Gradually pour in chicken broth while stirring to create a smooth sauce. Adjust thickness with more broth if needed.
  10. Stir in the ranch seasoning mix and then add shredded cheddar cheese, stirring until melted and creamy. If using, add frozen peas and cook for an additional 2-3 minutes.
  11. Add shredded chicken to the creamy sauce and stir to coat.
  12. Gently fold in the cooked gnocchi, ensuring they are well coated.
  13. Stir in crumbled bacon for added crunch and flavor.
  14. Taste and adjust seasoning with salt and pepper if necessary.
  15. Remove from heat and serve in bowls, garnished with sliced green onions.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will meld together, enhancing the taste.
