Instructions
- Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil over high heat.
- Add the penne pasta to the boiling water and stir gently. Cook according to package instructions (11-13 minutes) until al dente.
- Before draining, reserve about 1 cup of the pasta cooking water.
- Drain the pasta in a colander and set aside without rinsing.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
- Pour in the heavy cream and stir. Let it simmer for 3-4 minutes, stirring occasionally.
- Gradually add grated Parmesan cheese, stirring until melted and smooth. Adjust consistency with reserved pasta water if needed.
- Season with salt, black pepper, and red pepper flakes (if using). Taste and adjust seasoning.
- Toss the drained penne pasta in the sauce until well coated. Add more reserved pasta water if the sauce is too thick.
- If using, add halved cherry tomatoes and gently fold them into the pasta and sauce.
