  • 1 cup of frozen peas
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, paprika, and dried thyme. Rub the spices into the chicken for even flavor.
  2. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and cover with foil to keep warm.
  3. In the same skillet, reduce heat to medium and add butter. Once melted, add chopped onion and sauté for 3-4 minutes until translucent.
  4. Stir in minced garlic and sliced mushrooms, sautéing for another 3-4 minutes until mushrooms are tender.
  5. Add the rice to the skillet, stirring to coat it with the onion and mushroom mixture. This enhances the rice’s flavor.
  6. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
  7. In a separate bowl, mix heavy cream with a pinch of salt and pepper. Optionally, add more paprika or thyme for extra flavor.
  8. Once rice is cooked, stir in frozen peas and the heavy cream mixture, mixing well to combine.
  9. Nestle the cooked chicken breasts into the rice and creamy sauce, spooning some sauce over the chicken.
  10. Cover the skillet and let everything simmer together for an additional 5-10 minutes to meld flavors and heat the chicken through.
  11. Taste the creamy rice mixture and adjust seasoning with salt, pepper, or hot sauce if desired.
