  • 1 cup chicken broth
  • 1 cup heavy cream

  • 1 teaspoon dried rosemary
  • 1 cup grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the chicken breasts, ensuring they are evenly coated.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Stir occasionally.
  4. Add the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
  5. Pour in the chicken broth, scraping the bottom of the skillet to incorporate any flavorful bits. Bring to a simmer and cook for about 3-4 minutes to reduce slightly.
  6. Lower the heat to medium-low and stir in the heavy cream. Mix well until fully incorporated. Add the dried thyme and rosemary, letting the sauce simmer for another 5 minutes to thicken.
  7. Gradually add the grated Parmesan cheese, stirring continuously until melted and creamy. Simmer longer for a thicker sauce if desired.
  8. Return the cooked chicken to the skillet, nestling it into the sauce. If using spinach, add it now and stir gently. Cover and let simmer for 5-10 minutes.
  9. Once heated through, taste the sauce and adjust seasoning if necessary. Serve each chicken breast with a generous spoonful of sauce on top, garnished with fresh parsley.
