- 8 oz fettuccine pasta
- 1 lb sirloin steak, cut into thin strips
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup beef broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Fill a large pot with water and bring it to a rolling boil. Add a generous pinch of salt.
- Add the fettuccine pasta to the boiling water and cook according to package instructions (8-10 minutes) until al dente. Stir occasionally to prevent sticking.
- Reserve about 1 cup of pasta water, then drain the pasta and set aside.
- Season the sirloin steak strips with salt, pepper, and Italian seasoning.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the steak strips in a single layer and sear for 2-3 minutes on each side until browned. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
- Pour in 1 cup of beef broth, scraping the bottom of the skillet to deglaze. Bring to a simmer.
- Reduce heat to low and stir in 1 cup of heavy cream until fully incorporated.
- Gradually add grated Parmesan cheese, stirring continuously until melted and creamy. Adjust thickness with reserved pasta water if needed.
- Taste and adjust seasoning with salt, pepper, and more Italian seasoning if desired.
- Add the cooked steak back into the skillet, stirring to coat with the sauce.
- Gently fold in the drained fettuccine, ensuring it’s well coated. Add more reserved pasta water if necessary.
- Allow to heat together for another 2-3 minutes, stirring occasionally.
- Use tongs to twirl the creamy steak pasta onto plates or bowls.
- Sprinkle with freshly chopped parsley and extra Parmesan if desired.
- Serve immediately while hot and creamy, paired with a side salad or crusty bread.
