Instructions
- In a large bowl, combine your shredded chicken, cheese, sautéed onions and bell peppers, and spices. Mix well until all ingredients are evenly distributed.
- To prevent your tortillas from cracking, heat them in a dry skillet over medium heat for about 10-20 seconds on each side, or wrap them in a damp paper towel and microwave for about 30 seconds.
- Take a warmed tortilla and place about 2 tablespoons of the chicken filling near one edge. Roll the tortilla tightly around the filling, making sure to keep it as compact as possible. Secure with a toothpick if needed.
- In a large skillet, heat about 1 inch of oil over medium-high heat. To test if the oil is ready, drop a small piece of tortilla into the oil; it should sizzle immediately.
- Carefully place the rolled taquitos seam-side down into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy, flipping occasionally to get an even color.
- Once crispy, remove the taquitos from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauces, such as salsa, guacamole, or sour cream.
