- 2 pounds of baby potatoes
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the baby potatoes under cold water and pat them dry. Cut larger potatoes in half or quarters.
- In a large pot, cover the potatoes with cold water, add salt, and bring to a boil. Reduce to a simmer and cook for 10-15 minutes until fork-tender.
- Drain the potatoes and let them cool for a few minutes to allow steam to escape.
- In a large bowl, combine Parmesan cheese, olive oil, garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well.
- Add the cooled potatoes to the bowl and gently toss until well coated.
- Line a baking sheet with parchment paper or grease it lightly.
- Spread the coated potatoes in a single layer on the baking sheet, ensuring they are not overcrowded.
- Bake in the preheated oven for 25-30 minutes, tossing halfway through for even browning.
- After 25-30 minutes, check for golden brown and crispy texture. If needed, bake for an additional 5-10 minutes.
- Remove from the oven and let cool for a few minutes.
- Sprinkle with chopped parsley before serving.
- Transfer to a serving platter and enjoy warm, optionally with a dipping sauce.
