Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water and pat them dry. Cut larger potatoes in half or quarters.
  3. In a large pot, cover the potatoes with cold water, add salt, and bring to a boil. Reduce to a simmer and cook for 10-15 minutes until fork-tender.
  4. Drain the potatoes and let them cool for a few minutes to allow steam to escape.
  5. In a large bowl, combine Parmesan cheese, olive oil, garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well.
  6. Add the cooled potatoes to the bowl and gently toss until well coated.
  7. Line a baking sheet with parchment paper or grease it lightly.
  8. Spread the coated potatoes in a single layer on the baking sheet, ensuring they are not overcrowded.
  9. Bake in the preheated oven for 25-30 minutes, tossing halfway through for even browning.
  10. After 25-30 minutes, check for golden brown and crispy texture. If needed, bake for an additional 5-10 minutes.
  11. Remove from the oven and let cool for a few minutes.
