  • Author: Lily author
  • Total Time: 50 minutes
  • Yield: 4 servings

Description

Experience the delightful crunch of perfectly roasted potatoes paired with creamy baked feta and aromatic garlic. This dish is a comforting favorite that will impress at any meal!

Ingredients

  • Yukon Gold or red potatoes
  • Feta cheese
  • Fresh garlic cloves
  • Olive oil
  • Fresh rosemary or thyme
  • Fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). A hot oven is key to achieving that crispy exterior.
  2. Wash and cut your potatoes into evenly sized pieces, about 1 to 1.5 inches. This ensures they cook evenly.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, salt, pepper, and your choice of herbs. Make sure they are well coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 30-35 minutes, flipping them halfway through for even browning.
  5. While the potatoes are roasting, place the block of feta in the center of the baking sheet during the last 15 minutes of roasting. Drizzle it with a little olive oil and sprinkle with dried herbs.
  6. Once the potatoes are golden brown and crispy and the feta is warm and slightly melted, remove them from the oven. Squeeze fresh lemon juice over the top, and serve hot.
