  • 8 oz. Cream Cheese, softened
  • 1/2 cup Granulated Sugar
  • 1/4 cup Heavy Cream
  • 1/4 cup Chocolate Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Peppermint Extract
  • 1/4 cup Crushed Peppermint Candies
  • 1 cup Graham Cracker Crumbs
  • 1/4 cup Melted Butter
  • 2 tablespoons Sugar

Instructions

  1. In a medium bowl, combine 1 cup of graham cracker crumbs with 1/4 cup of melted butter and 2 tablespoons of sugar. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of a lined mini muffin tin. Place it in the refrigerator while we prepare the cheesecake filling.
  2. In a large mixing bowl, beat together 8 oz. of softened cream cheese and 1/2 cup of granulated sugar until smooth and creamy. Add in 1/4 cup of heavy cream, 1/4 cup of cocoa powder, 1 teaspoon of vanilla extract, and 1/2 teaspoon of peppermint extract. Beat until everything is well combined and there are no lumps.
  3. Gently fold in 1/4 cup of crushed peppermint candies into the cheesecake mixture.
  4. Spoon the cheesecake filling over the prepared crust in the mini muffin tin, filling each cup to the top. Smooth the surface with a spatula.
  5. Place the muffin tin in the refrigerator for at least 4 hours, or until the cheesecake bites are set. For best results, overnight chilling is recommended.
  6. Once set, carefully remove the cheesecake bites from the tin. You can garnish with additional crushed peppermint candies or whipped cream if desired.
