- 8 oz. Cream Cheese, softened
- 1/2 cup Granulated Sugar
- 1/4 cup Heavy Cream
- 1/4 cup Chocolate Cocoa Powder
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Peppermint Extract
- 1/4 cup Crushed Peppermint Candies
- 1 cup Graham Cracker Crumbs
- 1/4 cup Melted Butter
- 2 tablespoons Sugar
Instructions
- In a medium bowl, combine 1 cup of graham cracker crumbs with 1/4 cup of melted butter and 2 tablespoons of sugar. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of a lined mini muffin tin. Place it in the refrigerator while we prepare the cheesecake filling.
- In a large mixing bowl, beat together 8 oz. of softened cream cheese and 1/2 cup of granulated sugar until smooth and creamy. Add in 1/4 cup of heavy cream, 1/4 cup of cocoa powder, 1 teaspoon of vanilla extract, and 1/2 teaspoon of peppermint extract. Beat until everything is well combined and there are no lumps.
- Gently fold in 1/4 cup of crushed peppermint candies into the cheesecake mixture.
- Spoon the cheesecake filling over the prepared crust in the mini muffin tin, filling each cup to the top. Smooth the surface with a spatula.
- Place the muffin tin in the refrigerator for at least 4 hours, or until the cheesecake bites are set. For best results, overnight chilling is recommended.
- Once set, carefully remove the cheesecake bites from the tin. You can garnish with additional crushed peppermint candies or whipped cream if desired.
