- 2 medium Yukon Gold or Russet potatoes, diced
- 1 onion, diced

- 1 pound beef sausage
- 4 cups low-sodium chicken or vegetable broth
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream or milk alternative
Instructions
- Start by dicing 2 medium potatoes, 1 onion, 2 celery stalks, and 1 bell pepper. Mince 4 cloves of garlic. Set aside.
- In a large pot over medium heat, add 1 pound of beef sausage. Cook until browned, about 5-7 minutes. Remove the sausage and set it aside, keeping the drippings in the pot.
- In the same pot, add the diced onion, celery, and bell pepper. Cook for about 5 minutes until they are softened. Stir in the minced garlic and cook for an additional minute.
- Add the diced potatoes to the pot, along with 4 cups of broth (chicken or vegetable). Bring it to a boil.
- Once boiling, reduce the heat to low and stir in 2 tablespoons of Cajun seasoning. Let it simmer for about 15-20 minutes, or until the potatoes are tender.
- For a creamier texture, you can use an immersion blender to puree a portion of the soup, or transfer about half to a blender and blend until smooth. Return it to the pot.
- Stir in 1 cup of heavy cream (or your milk alternative) and the cooked sausage. Let it heat through for another 5 minutes.
- Taste the soup and adjust the seasoning if necessary, adding salt, pepper, or more Cajun seasoning to your liking.
- Garnish with chopped green onions or parsley and serve hot with crusty bread on the side.
