Instructions
- Preheat your oven to 325°F (163°C). In a bowl, mix the graham cracker crumbs with melted unsalted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then remove from the oven and let it cool.
- In a small saucepan, heat 1 cup of heavy cream until it’s just about to simmer. Remove from heat and add 2 tablespoons of loose Earl Grey tea (or 2 tea bags). Let it steep for about 15 minutes, then strain out the tea leaves. Allow the cream to cool slightly.
- In a large mixing bowl, beat 24 ounces of softened cream cheese until smooth. Gradually add in 1 cup of granulated sugar, mixing until combined. Then, add in the sour cream and the cooled infused cream, combining everything until smooth and creamy.
- Gently mix in 3 large eggs, one at a time, making sure each egg is fully incorporated before adding the next. Avoid overmixing to keep the cheesecake light.
- Pour the filling over the cooled crust. Bake in the preheated oven for about 60-70 minutes, or until the edges are set, but the center still has a slight jiggle. Turn off the oven and crack the door, letting the cheesecake cool slowly for an hour.
- Once cooled, cover the cheesecake and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the texture to set beautifully.
